Polly's Pastries started with a simple conviction: that the best bread and pastries come from patience, quality ingredients, and hands that actually care. Located on OH-590 in Fremont, we've been serving our neighborhood one loaf, one tart, and one perfectly pulled espresso at a time.

Our bakers arrive before dawn so the smell of fresh croissants and sourdough greets you the moment you walk in. We source local dairy, mill our own flour blends, and let fermentation do what it's supposed to — take its time. The result is something you can taste in every bite.
